How do I describe these waffles?
Like heaven on earth?

All of the above!
They are warm and fluffy on the inside and crunchy on the outside and because of that, it’s the perfect marriage. Plus the gingerbread flavor is wonderful too.
Mel used spelt flour to make these but I bet you could easily make them with white or whole wheat without changing the flavor, but I’d check with Mel to see if anything else would need to change in the recipe. I made them as is because I like spelt flour but if you don’t like a nutter undertone, you’ll want to change it up.
